Abstract

One of the main objectives, which determine an increase in the economic efficiency of sheep breeding in our modern country, is a sharp reduction of production costs due to the introduction of integrated management systems of quality control and quantity in production. Lamb meet is one of the most promising types of meat for processing, which can be used for both general and special nutrition. So, we studied a morphological pattern of soft tissues of Volgograd ovises breed derived from animals with different degrees of the wool fineness. The analysis of the microstructure of the muscles construction (quadriceps thigh muscle at 4 and 7 months of age) indicates that meat obtained from Volgograd ovises breed is 60 qualilty, which is the best quality.
